Does the shield activate as in starting to absorb ALL damage once it gets hit by a siege tank for instance.
Or does it absorb the damage only from the siege tank?
example: If a reaper and a siege tank are attacking him, does he absorb both, or just the tank?
cant know for sure but in the first video(the long one) the immortals shield would absorb a direct hit from a shield tank very well but not the splash dmg.. so to answer your question no

The video implied that the Immortal deflects a lot of (but not necessarily all, or it'd be just unfair) the damage from a powerful hit. Given that the Reaver is even more powerful than the Siege Tank, I'd say it would deflect that, as well.

I dont believe that the harden shell eliminates slash dmg...which should still occur
The Immortal absorbs most of the damage, not all. As you can clearly see, the Siege Tanks still managed to kill 2 Immortals during the assault in the Gameplay Video.
I heard somewhere that the shields can absorb up to 800 damage before it starts to take full damage. Can anyone confirm this?

I thought that the hardened shield only reduced heavy attacks and that any other attacks damaged the normal shield/HP
